The name Escoffianas Brasileiras is a joke, a word play with the name of the French chef Georges Auguste Escoffier, a restaurateur and writer who popularized and renewed the traditional methods of French cuisine, and the name of the musical composition Bachianas Brasileiras by the Brazilian composer Heitor Villa-Lobos.
Villa-Lobos used the name of Bach to compose the Brazilian music, as Alex Atala uses Escoffier to unravel the national gastronomy.
